Keto diet delicious gluten free roast potato substitute

We are heading for the festive season so I thought it would be a good time to share my keto diet or low carb, gluten free roast potato substitute patties. However if you are abandoning the keto or low carb diet for the Christmas period, I won’t judge you but then you may want to try my crispy smashed potato recipe. These patties make a fantastic side dish when smothered in gravy with a roast of any kind. Like the Xmas or Thanksgiving turkey for instance. It is wise to use gluten free recipes for large, extended family, festive gatherings as there is always a chance that someone will be gluten intolerant.

Always check the ingredient labels to make sure they are gluten free if you are catering for the  gluten intolerant!

Based on 8 serves (3 patties per serve)

Calories 200 per serve

Carbs 4 grams per serve

Ingredients

200gms Kent pumpkin with skin– mashed

200gms cauliflower stalk – mashed

½ cup almond flour

½ cup grated cheese

2 tsps Parmesan

1/3 tsp baking powder

50gms butter

1 egg beaten

Lard to grease the patty pan

Method

Grate skin off pumpkin and retain skin for increased fibre and dice pumpkin

Dice cauliflower stalks

Mix diced pumpkin and cauliflower together and microwave until tender

Mash with butter

Add almond flour, baking powder, cheeses and egg

Mix well

Put a small dollop of lard in each well of the patty pan and pre heat in oven at 180 C

Spoon the mix into the pre-heated patty pan

Bake for 25-30 mins in a preheated oven or until golden brown at 180 C
