These are the crispiest roast potatoes ever
Squashed or smashed potatoes are roast potatoes on steroids. They usually turn out so crisp and tasty. My method,described here, involves first microwaving as you would a jacket potato with the skin on, then cut in half lengthways and squash with a fork or spoon. Liberally drizzle olive oil, then salt and put in an oven at 180C for about an hour.
