This delicious low carb keto diet cauliflower chorizo soup is packed with flavour and very satisfying. Ideal for winter’s night keto diet meal. It is also quick and easy to prepare with economical, whole natural unprocessed ingredients. This quantity will serve 4-6 people. Ingredients for keto diet cauliflower and chorizo soup
1 small onion chopped
1/3 of a leak chopped
1 cup mushrooms chopped
2 cups cauliflower chopped
1 x 100g Chorizo sausage sliced
2 sprigs parsley chopped
1 cube or stock pot vegetable stock
1 tablespoon butter for frying
1 teaspoon minced garlic
1 teaspoon Dijon mustard
2 – 3 cups water
2/3 cup grated cheese
200mls fresh cream
50mls sour cream
Chives chopped for garnishing
Method for keto cauliflower and chorizo soup
Step 1. Chop and slice the ingredients
Step 2. Fry ingredients starting with onions, mushrooms and chorizo
Step 3. Add liquids and simmer until cauliflower is soft. About 20 mins
Step 4. Remove chorizo and blitz/blend
Step 5. Return chorizo, add cheese and return to heat for 2-3 minutes to melt the cheese.
Serve in bowls garnished with chopped chives and enjoy!
