Today we are talking about keto diet cheese muffins. You have to try these they are fantastic, especially if you get a bit peckish during the day. They make a very satisfying snack for those on the keto diet any time of the day. And as a bonus these keto cheese muffins are also gluten free but obviously check your labels for gluten. Now today I will show you the basic keto cheese muffin recipe but you can jazz them up a bit by adding thins like chopped bacon or chicken and even diced onion or some other veg. These keto cheese muffins will keep a few days in the fridge or you can freeze them and just thaw them in the microwave for 10-20 seconds. These are one of the easiest keto and gluten free recipes to make and bake. Add extras of any variations you enjoy to the dry ingredients before wet ingredients are added – such as: Shredded roast chicken & chives, diced bacon or ham, diced onion.

Keto Cheese Muffin recipe

These muffins are delicious hot or cold and can be made ahead, stored in the fridge or freezer to use as required.

Ingredients for keto cheese muffins

Makes 12 muffins

2 cups almond flour      28g     900cals
1 tsp baking powder        2g
¼ tsp salt
1 cup grated Cheddar or similar
½ cup grated Mozzarella               
½ cup grated Parmesan               
½ cup sour cream                           
¼ cup melted butter                      
1 large egg

Total carbs                                         33g/12 = 2.75g/ muffin

Total Calories                                            2030  cals/ 12 = 180 cals/muffin

Method for making keto cheese muffins

  • Preheat oven to 180°C
  • Prepare a 12 hole muffin tray with a little olive oil
  • In a large bowl mix almond flour, baking powder and salt.
  • Add the three cheeses and stir through.
  • Add the wet ingredients and mix until combined.
  • Fill the 12 holes of the muffin tray evenly with the mixture.
  • Bake for 15 to 20 minutes until the tops are golden and bounce back when touched.
  • Remove from oven and leave to cool in the pan for 5 minutes.
  • Enjoy with a dollop of butter.

Optional extras for keto cheese muffins

Add extras of any variations you enjoy to the dry ingredients before wet ingredients are added – such as:
