More low carb than keto but still delicious
Since making the original video on how to make rusks we have gone onto a keto diet so I have experimented with the original recipe and have come up with this recipe which is equally delicious but I believe better for you health-wise due to the reduction in carbs and the replacement of margarine with butter. Feel free to do your own experimenting but if you do, try to keep the total of ingredients in red around about 1 Kg.
The method remains essentially the same so and you can get detail on that by watching the video below but obviously replace the ingredients used in the video with these:
Low Carb or Keto Rusks
|50 g||Oat Bran|
|200 g||Whole-wheat Flour|
|300 g||Almond Meal/Flour|
|50 g||Coconut Flour|
|50 g||Flaxseed Meal|
|50 g||Psyllium Husk|
|45 mls||Baking Powder|
|½ Cup||Sunflower Seeds|
|½ Cup||Sesame Seeds|
|¼ Cup||Chia Seeds|
|½ Cup||Chopped Walnuts or pumpkin seeds|
|500 g||Melted Butter|
|1 or 1.5 Cups||Low Carb artificial Sweetener (granular sugar equivalent – erythritol)|
|About 6 Carbs Per Rusk based on a yield of 80 rusks per mix|
NB. Use seeds and nuts to your taste. Pumpkin seeds are a good addition.
Method (see original video below but use ingredients above))
Mix together the dry and wet ingredients.
Press into baking tins.
Bake at 180° C for 40 to 45 minutes or until cooked all the way through.
Cool in fridge for 2 or more hours.
Slice as required (Approx 80 rusks).
Dry in oven – around 100° until crisp.
