Perfect pork belly crackling Norwegian style
Today we are going to have another crack at pork belly crackling but this time I am going to try the Norwegian way as described to me by one of our viewers. This was the first time I used this method living dangerously and live on the video below. I have always got my microwave pork crackling, rescue hack, here if things go badly.
This method sounded very good so I was keen to see how it turned out. Basically, as was described to me the pork belly is seasoned and left to stand in the fridge for a few hours, then placed in a baking dish upside down in a small amount of water and covered with aluminium foil and baked in a preheated oven for about 1 hour. Then remove foil and turn pork belly over now with skin upwards and return to the oven for about 1.5 hours adjusting temperature upwards if necessary depending hour the crackling is going. We found about 200C for 1 to 1.5 hours worked for us to get good crackling.
Method for cooking pork belly crackling the Norwegian way
- Season pork belly and let rest in refrigerator for several hours
- Remove pork belly from fridge and turn upside down (skin down) in a baking dish
- Pour about 1 cm of water into baking dish
- Cover pork belly with aluminium foil and bake in oven at 180C for about 1 hour
- Remove aluminium foil and turn pork belly with skin up
- Return to oven at about 200C for about 1.5 hours or until crackling is crisp
- Remove from oven and let rest for 10 minutes
- Enjoy! Ours was absolutely delicious.
This pork belly turned out perfectly, the meat was very tender and succulent, probably because the water kept it from drying out. The pork crackling turned out superb, very crispy and delicious, So if you want to know how to cook pork crackling and pork belly this is a very good recipe.
